- 1 small onion (finely chopped)
- 3 cups fresh peas
- 3 cups vegetable stock
- 1 cup 2% milk
- ½ cup plain Yogurt
- salt
- freshly ground Black pepper

A little chopped gammon makes a perfect garnish for this soup.
Preparation steps
1.
Heat the oil in a large saucepan set over a medium heat until hot. Add the onion and a little salt, sweating for 4 minutes until soft.
2.
Add all of the peas, save for a small handful, and cover with the stock and milk. Stir well, and cook until simmering.
3.
Cook for 10 minutes and then blend with an immersion blender until smooth. Season to taste with salt and pepper.
4.
Ladle into bowls and serve with the reserved peas and a swirl of yoghurt.
