1 small onion (chopped)
1 clove garlic cloves (chopped)
5 cups Pumpkin (peeled and cut into 1 cm | 1/2" cubes)
½ tsp Curry powder
2 cups vegetable stock
1 cup Whole milk
salt

Preparation steps

1.
Divide the onion, garlic, and pumpkin between four large microwaveable mugs. Cover with clingfilm and cook on high for 6 - 8 minutes until the pumpkin is tender.
2.
Carefully remove from the microwave and add the curry powder, stock, milk, and some seasoning.
3.
Return to the microwave and cook on high for a further 5 - 7 minutes, stirring after 3 minutes, until the pumpkin is very soft.
4.
Carefully remove the mugs from the microwave and blend with an immersion blender. Season to taste with salt and pepper before serving.
