2 Tbsps butter
1 onion (finely sliced)
4 cups vegetable stock
8 cups Sorrel (shredded)
1 Tbsp sugar
2 Tbsps lemon juice
½ cup cream (30% fat)

Preparation steps

1.
Heat the butter in a large pan and cook the onion gently until soft but not brown.
2.
Pour over the stock, bring to a boil then add the sorrel and cook for 5 minutes or until the sorrel is tender.
3.
Add the sugar and lemon juice, season with salt and pepper then add the cream. Chill for at least 2 hours before serving.
