Fruity Vegetable Salad
Peel, halve and remove seeds from the papaya. Halve the papaya flesh lengthwise and cut crosswise into thin strips. Halve the bell peppers, remove the seeds, rinse and cut into thin strips. Rinse and thinnly slice the celery. Peel, halve crosswise, and cut the carrots lengthwise into thin strips.
Combine oil, vinegar, lemon juice, sugar, allspice, ginger, salt and pepper. Mix papaya and vegetables with the sauce and let sit for 20 minutes. Rinse and slice the scallions.
Spread the salad on plates and sprinkle with scallions. Serve.
