6 Kiwi (peeled and sliced)
2 ⅔ cups Strawberries (sliced)
1 cup Mandarin orange (in juice)
lemon juice
4 Tbsps mint (finely chopped)

Preparation steps

1.
Cook the quinoa according to the packet instructions. Drain, rinse in cold water and set aside.
2.
Mix the kiwi and strawberries into the quinoa.
3.
Drain the mandarins, reserving about 100 ml| 1/2 cup of the juice, and add to the quinoa.
4.
Mix the reserved mandarin juice with the lemon juice and chopped mint and gently stir into the quinoa and fruit.
5.
Serve the salad topped with the mint sprigs.
