Preparation steps
1.
Rinse lime with hot water, pat dry, and remove zest in a spiral pattern. Set aside for garnish. Squeeze juice from lime and mix with passion fruit puree and sugar. Pour mixture into a shallow metal pan and freeze at least 2 hours, stirring occasionally with a fork to prevent large ice crystals from forming.

To serve, divide sorbet among glasses. Top each with 3 raspberries and fill with well-chilled Prosecco.

Serve garnished with lime zest spirals and fresh mint.
