Pineapple is an extremely versatile and popular fruit - and rightly so: the pulp provides vitamin C, as well as minerals and trace elements such as calcium, potassium, magnesium, iron, phosphorus and zinc. The enzyme bromelain from the pineapple promotes digestion and has an anti-inflammatory effect.

Add chicory to the fruit salad - the salad contains large amounts of inulin. This soluble fibre "feeds" the useful bacteria in the intestines and thus has a positive effect on the body's defences.

2 Tbsps honey
¼ tsp cinnamon
¼ tsp Cardamom (ground)
1 large pomegranate

Preparation steps

1.

Peel the pineapple with a sharp knife. Cut the fruit into quarters, then remove the core. Cut the pineapple quarters into small pieces. Peel, halve lengthwise, and thinly slice the kiwi.

Mix orange juice with the honey, cinnamon, and cardamom. Add to the pineapple and kiwi, and thoroughly combine.

3.

Cut the pomegranate into quarters, and remove the seeds with a fork. Arrange the salad on plates, and garnish with the pomegranate seeds just before serving.
