½ Galia melon
2 Banana
150 grams Raspberries
2 Kiwi
100 grams red Currants
2 Apricot
1 lemon
1 sprig Lemon balm
1 packet Vanilla sugar

Preparation steps

Halve the melon carefully with a sharp knife, leaving a handle shape in the middle. The melon should resemble a basket. Cut the edges of the melon jaggedly. Scrape out the flesh of the melon, until you get to the rind. Using a melon baller, form balls from the first halve that was removed.

Remove the seeds from the galia, and scoop out balls using the melon baller. Peel and slice the banana. Remove the zest from the lemon in strips, squeeze the juice, and drizzle a little over the slices of banana. Peel the kiwi and slice thinly. Clean the raspberries. Remove the currants from the vine, rinse, and pat dry.

Halve the apricot, remove the pit, and cut into thin slices. Mix the remaining lemon juice with the vanilla sugar and drizzle over the fruit. Cover and chill in the refrigerator for 30 minutes. Before serving, fill the melon basket with the fruit, and garnish with the lemon balm and zest.
