5 cups eating Apple (peeled, cored and chopped)
1 Orange (Zest and juice)
½ cup caster sugar
¼ tsp ground cloves
2 tsps ground cinnamon
grated Nutmeg
½ cup Golden raisins (soaked in a little Calvados or brandy)
6 sheets pre-made phyllo pastry (filo)
¼ cup butter (melted)
3 Tbsps breadcrumbs

Preparation steps

1.
Preheat the oven to 190°C | 375F | gas 5.
2.
Place the apples in a bowl and coat well with the orange juice to prevent browning. Add the zest, sugar, spices and sultanas. Mix well.
3.
Brush each sheet of filo with melted butter, keeping the rest under a damp tea towel while not using.
4.
Lay out a large piece of baking parchment and layer the sheets of filo on top of one another. Sprinkle the top sheet with breadcrumbs.
5.
Spoon the apple mixture down the middle of the sheet.
6.
Roll the pastry around the apple to make a fat sausage, suing the parchment to help you roll.
7.
Lift onto a baking sheet, brush with more melted butter and bake for 35 minutes or until golden and crisp.
