Ingredients

For the cake dough
1 ⅔ cups flour
1 small egg
¼ cup Margarine
2 Tbsps Yogurt
3 Tbsps Apple syrup (or sweet juice)
For the filling
¼ cup Corn starch
1 Vanilla bean (seeds scraped out)
1 Tbsp sugar
½ tsp cinnamon
1 cup Apple juice (unsweetended)
5 Apple (peeled and sliced)
For the crumble topping
¾ cup flour
¾ cup Almond flour
1 tsp Vanilla sugar
¼ cup Yogurt
3 Tbsps Apple syrup (or sweet juice)
2 cups Blueberries (to garnish)

1 Brush, 1 Cutting board, 1 Small knife, 1 Fine grater, 1 Citrus juicer, 1 Mixing bowl, 1 Hand mixer, 1 Kitchen scale, 1 Bowl, 1 Teaspoon, 1 Measuring cups, 1 Tablespoon, 1 Bundt pan (22 cm Ø), 1 Wire rack, 1 Small bowl

Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tin with greaseproof paper.

To make the cake dough, knead together the flour, egg, margarine, yoghurt and apple syrup. If necessary add a little more syrup or flour. Wrap in plastic foil and refrigerate for 30 minutes.

Mix the cornflour together with the vanilla seeds and then stir in the sugar and cinnamon. Mix in a third of the apple juice.

Bring the remaining apple juice to the boil and stir in the mixture from step 3. Bring everything to the boil. Set aside and leave to cool slightly. Stir in the apple slices.

Place the ball of cake dough in the cake tin and push it out from the middle so it takes on the shape of the tin. Create a 2 cm high crust. Spread the apple mixture evenly on top of the dough and bake for 30 minutes.

In the meantime mix together the flour, almonds and vanilla sugar to make the crumble topping. Add the yoghurt and the apple syrup and rub together with your fingertips to form breadcrumbs. If necessary add a little more flour.

Sprinkle the crumbles on top of the pre-baked cake and bake for another 30 minutes. Leave to cool on a wire rack. Before serving remove from the tin and decorate with blueberries.
