- 200 grams Hawthorn berry
- 1 Vanilla bean
- 100 milliliters Apple juice
- 400 grams fresh Figs
- ½ Apple
- 1 small shallot
- 1 pc fresh ginger (about 1 cm)
- 150 grams brown sugar
- 1 generous pinch cinnamon
- 1 generous pinch cloves
- ½ tsp Cumin
- Coriander
- ½ tsp Orange zest
- salt
- freshly ground peppers
- 100 milliliters White vinegar
Preparation steps

Rinse and drain the hawthorn berries. Halve the vanilla bean lengthwise and scrape out seeds. In a bowl, soak the vanilla bean, berries and apple juice overnight.

Rinse, dry and cut the figs into large pieces. Rinse, halve, remove the core and cut the apple into small pieces. Peel and finely dice the shallot and ginger. Bring the apple, shallot, ginger, sugar, spices, berries and vinegar to a boil.

Set to lower heat and allow to simmer for about 15 minutes. Pass the mixture through a sieve and fill into prepared jars. Seal the lids and leave to cool. Serve with goat cheese.
