Fruit and Vegetable Rice Salad
Briefly cook the vegetables in boiling salted water, drain and mix with rice in a bowl. Peel banana and apple, cut into small pieces and sprinkle with lemon juice.
Mix the fruit into the rice and vegetable mixture. Mix together the mayonnaise, sour cream, salt and pepper until smooth, then add to the salad. Season with salt and pepper, cover and let sit for a half hour. Serve with flatbread, as desired.
