- ½ cup Pistachio
- 1 cup self-rising flour (heaped)
- 1 Tbsp light brown sugar
- ⅛ cup butter (melted)
- 1 small, ripe Banana (mashed)
- 1 egg (beaten)
- 1 Tbsp clear honey
- 2 ½ Tbsps milk
- 1 firm Banana

Preparation steps
1.
Heat the oven to 190°C, 170° fan) 375°F, gas 5. Place paper cases in 6 muffin tins.
2.
Chop half the pistachios.
3.
Put the flour, sugar, butter and mashed banana in a mixing bowl and mix together until combined.
4.
Whisk together the eggs, honey and milk and stir into the other ingredients until just blended. Stir in the chopped pistachios.
5.
Spoon into the paper cases.
6.
Slice the firm banana and arrange on top of the mixture. Sprinkle with whole pistachios.
7.
Bake for 15-20 minutes until risen and firm to the touch. Cool in the tins for 10 minutes then place on a wire rack to cool completely.
