7 fresh egg yolks
60 grams Dark chocolate
300 milliliters Whipped cream
150 milliliters cold Espresso
100 grams Ladyfinger
mint (for garnish)

Preparation steps

Slit the vanilla pod lengthwise and scrape out the seeds. Beat the vanilla pod, sugar and egg yolks over a hot water bath until creamy. Remove from the heat and beat over an ice water bath until cold. Chop the chocolate. Remove the vanilla pod from the cream. Add the whipped cream, chocolate and 50 ml (approximately 1/5 cup) of espresso.

Freeze the mixture for about 3 hours, stirring occasionally.

Remove one ball of the frozen tiramisu and place on a plate with ladyfingers. Dribble the remaining espresso over the top. Repeat for multiple servings. Serve garnished with mint and dusted with cocoa powder.
