- 13 ozs Shortcrust pastry
- 6 Tbsps Orange marmalade
- 1 cup butter (scant)
- 1 cup caster sugar (scant)
- 4 eggs
- ¾ cup Almond flour
- 1 cup self-rising flour (plus extra for dusting)
- 1 unwaxed Orange (juice and finely grated zest)
- For the icing
- 3 cups powdered sugar

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a a 30cm x 20cm|12" x 8" baking tin.
2.
Roll out the pastry on a surfaced dusted with flour. Line the base of the tin.

Spread the marmalade over the pastry base.
4.
Beat together the butter and sugar in a mixing bowl until smooth and creamy. Beat in the eggs, 1 at a time, adding 1 tablespoon of ground almonds after each addition.

Add the flour, remaining almonds, orange juice and zest and stir well. Spoon the mixture evenly over the marmalade. spreading to make an even layer.
6.
Bake for 35-40 minutes until well risen, firm and golden. Remove from the oven and leave to cool in the tin.
7.
For the icing: sift the icing sugar into a bowl and beat in the water to make a fairly thick icing.
8.
Spoon the icing on top of the cake, spreading evenly. Leave to set. Cut into squares or rectangles to serve.
