- For the cake
- 1 cup dried breadcrumbs
- 1 ¾ cups finely chopped Pistachio
- 1 pinch salt
- ⅔ cup caster sugar
- 2 tsps Baking powder
- 1 ½ tsps ground cinnamon
- 1 unwaxed Orange (finely grated zest)
- ¾ cup unsalted butter (melted)
- 5 eggs
- For the syrup
- 3 Oranges (juice)
- ⅔ cup caster sugar
Preparation steps

For the cake: heat the oven to 190°C (170° fan) 375°F gas 5. Grease a 24cm|9-10" loose-based cake tin and line the base with non-stick baking paper.

Mix together the breadcrumbs, pistachios, salt, sugar, baking powder, cinnamon and orange zest in a mixing bowl.

Make a well in the centre, pour in the butter and add the eggs. Beat until thoroughly mixed.

Pour into the tin and bake for 40-50 minutes until firm to the touch. Test by inserting a skewer or wooden cocktail stick, which should come out clean.

For the syrup: put the ingredients into a pan and heat gently until the sugar has dissolved completely. Bring to a boil and simmer for 5 minutes. Make holes in the cake with a skewer. Pour over half the hot syrup and leave to cool completely until the syrup is absorbed.
6.
Remove from the tin and pour the remaining cold syrup on top of the cake.
