For the cupcakes
½ cup butter
½ cup superfine caster sugar
2 eggs
1 cup all-purpose flour (heaped)
1 tsp Baking powder
½ tsp baking soda
1 tsp ground cinnamon
1 Apple (peeled, cored and diced)
For the icing
2 ½ cups powdered sugar
2 Tbsps hot water
½ tsp vanilla extract
red Food coloring
To decorate
green sugar paste leaf (leaves)
6 edible chocolate twig candy (broken in half)

Preparation steps

1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 12 hole bun tin.
2.
Beat the butter and sugar in a mixing bowl until light and fluffy.
3.
Add the eggs, one at a time, beating thoroughly after each addition.
4.
Fold in the flour, baking powder, bicarbonate of soda and cinnamon until just combined. Gently stir in the apples.
5.
Spoon into the paper cases and bake for 20-25 minutes until risen and golden. Place on a wire rack to cool completely.
6.
For the icing: sift the icing sugar into a bowl and beat in enough water to give a smooth thick texture. Stir in the vanilla and food colouring until smooth.
7.
Spread on top of the cakes and attach a sugarpaste leaf to each cake. Insert a piece of chocolate 'twig' into the centre of each cake and leave to set.
