3 Tbsps olive oil

Preparation steps

1.

Rinse and trim the zucchini and cut lengthwise into thick slices of about 1 x 8 cm (approximately 1/2 x 3 inches). Steep in salted water for about 20 minutes and then pat dry.

Pour the flour onto a deep plate, the beaten eggs on another plate, and the breadcrumbs mixed with Parmesan on the third plate.

3.

Roll the zucchini slices in flour, dip in the eggs and turn in the Parmesan breadcrumbs.

Fry in portions in a large pan for 4-6 minutes until golden brown on both sides. Drain on paper towels.

Serve seasoned with salt and pepper.

If desired, serve with a tomato sauce.
