Rinse zucchini, pat dry and trim off the ends. Cut into quarters lengthwise and cut into pieces.

Heat oil in a pan until hot. Add zucchini and fry, stirring and turning pieces occasionally, until golden-brown, 5-6 minutes. Season with salt and pepper and serve.
