Fried veggie wrappers

For servings

2 cupsSnap pea
2carrots grated
1 handfulBean sprout
1red peppers cut into strips
1Garlic cloves finely chopped
1 tablespoonfresh Cilantro chopped
1 tablespoonChive
1 teaspoonfresh Ginger root grated
soy sauce
cayenne pepper
12Spring roll dough sheet approx. 12 x 12 cm each
Peanut oil


1 Blanche the mange tout and the carrots in salt water for 1-2 minutes. Rinse and drain; cut the mange tout in strips.
2 Add the bean sprouts, pepper, garlic, herbs and ginger to the carrots and mange tout and season with soy sauce and cayenne pepper.
3 Place 1-2 tbsp of the filling in the middle of the spring roll sheets. Fold over the edges and roll up. Fry in hot oil for 3-4 minutes. If desired serve with dips.
