- 2 cups Snap pea
- 2 carrots (grated)
- 1 handful Bean sprout
- 1 red pepper (cut into strips)
- 1 garlic clove (finely chopped)
- 1 Tbsp fresh cilantro (chopped)
- 1 Tbsp Chives
- 1 tsp fresh ginger (grated)
- soy sauce
- cayenne pepper
- 12 Spring roll dough sheet (approx. 12 x 12 cm each)
- Peanut oil
Preparation steps
1.
Blanche the mange tout and the carrots in salt water for 1-2 minutes. Rinse and drain; cut the mange tout in strips.
2.
Add the bean sprouts, pepper, garlic, herbs and ginger to the carrots and mange tout and season with soy sauce and cayenne pepper.
3.
Place 1-2 tbsp of the filling in the middle of the spring roll sheets. Fold over the edges and roll up. Fry in hot oil for 3-4 minutes. If desired serve with dips.
