- 1 duck leg 300 grams (approximately 10.5 ounces)
- 125 grams cooked ham
- 150 grams peeled shrimp (ready to cook)
- salt
- freshly ground peppers
- 2 Tbsps Rice wine
- 100 grams Bamboo shoots (in a can)
- 2 scallions
- 1 garlic clove
- 4 Tbsps vegetable oil
- 1 tsp soy sauce
- 200 grams Frozen pea
- 300 grams cooked Rice
- 2 Tbsps light soy sauce
- 2 eggs
- 1 Tbsp sesame oil
Preparation steps
Cut the duck breast (with the skin) into narrow strips. Finely dice the ham. Season shrimp with salt and pepper and sprinkle with rice wine.
Drain the bamboo shoots. Rinse the scallions and cut into strips. Peel and finely chop the garlic. Thaw the peas.
Heat half of the oil in the wok. Season the duck strips with salt and pepper and fry on all sides while stirring. Remove, place on a tray and drizzle with soy sauce.
Heat the remaining oil in the wok and cook the garlic, scallions, ham, peas and bamboo strips. Add the rice and stir fry. Season with light soy sauce. Add in the meat strips and shrimp and cook another 2 minutes. Form a well in the middle with the wooden spoon. Beat the eggs and pour them into the well. Once they start to cook, mix them with the other ingredients. Serve in preheated bowls and drizzle with sesame oil.
