- 4 Perch fillet (about 160 grams each, with skin)
- vegetable oil (for frying)
- 3 Red Bell pepper
- 1 yellow Bell pepper
- 1 Tbsp ground paprika
- 1 onion
- 2 garlic cloves
- ¼ l Chicken broth
- 2 Tbsps Pastry flour
- 1 tsp White vinegar
- 1 Tbsp butter
- salt
- freshly ground peppers

Preparation steps

Rinse and halve peppers, remove seeds and ribs and cut into thin strips. Peel onion and cut into strips. Peel and finely chop garlic.

In a pot, cook butter until frothy. Add onion, garlic and peppers and sauté briefly. Stir in paprika, vinegar and chicken broth and bring to a boil. Simmer over low heat until peppers have softened, about 6 minutes. Whisk flour with 1/8 liter (approximately 1/2 cup) water and stir into peppers. Let simmer until thickened. Season with salt and pepper.

Rinse perch, pat dry and season with salt and pepper. In a pan, fry perch, skin side down, in a little hot oil, about 5 minutes. Turn fish and cook briefly on the other side until cooked through. Serve fish on peppers.
