2 scoops fresh Mozzarella (each 125 grams)
1 egg

Pastry flour (to dredge)
150 grams breadcrumbs
30 grams clarified butter

Preparation steps

Drain the mozzarella and cut into 0.7 cm (approximately 1/4 inch) thick slices. Beat the egg and season with salt and pepper. Dredge the mozzarella slices first in flour, then in the beaten egg and finally in breadcrumbs. Gently press to coat.

Fry the cheese slices in hot butter until golden brown. Drain on kitchen paper and serve as desired with fresh green salad.
