250 grams Mayonnaise
2 Tbsps sweet Chili sauce

600 grams fish fillets (ready to cook, skinless, such as wolffish, cod)
2 Tbsps lemon juice
1 egg
100 grams Pastry flour
clarified butter
1 organic lemon (sliced)

Preparation steps

1.

Cook rice in a pot with 500 ml (approximately 32 ounces) of salted boiling water.

For the mayonnaise, rinse cilantro, shake dry, pluck leaves from stems and finely chop. Mix mayonnaise in a bowl with chili sauce and cilantro.

Rinse fish, pat dry, cut into strips and season with salt and pepper. Sprinkle fish with lemon juice and cover first in beaten egg and then in flour. Melt butter in a pan, fry fish on all sides until golden brown, remove from the pan and let rest briefly on paper towel. To serve, arrange rice on plates and cover with fish. Serve with mayonnaise mixture and garnish with lemon wedges.
