- For the chicken
- 4 Chicken breasts (200 grams each)
- 50 grams Shredded coconut
- 1 Tbsp Curry powder
- 1 egg
- 1 Tbsp dark soy sauce
- 1 Tbsp Potato starch

- 1 sprig Thai basil (finely chopped)
- For the sauce
- 500 milliliters Coconut cream
- 2 Tbsps yellow Curry paste
- 1 onion
- 2 garlic cloves
- 1 Tbsp vegetable oil

Preparation steps

For the chicken, cut the chicken breasts into pieces and mix with all the remaining ingredients except the basil leaves in a bowl. Leave the chicken breast pieces to marinate for 30 minutes.
For the sauce, peel the onion and garlic cloves, and cut into fine dices. Heat oil in a pan and saute the onion and garlic in it until translucent. Add the curry paste and pour in the coconut milk. Let simmer for about 10 minutes over low heat.
Drain the marinated chicken breast pieces and fry in a pan in oil for about 4-5 minutes. Stir in the basil.

Serve the fried chicken breast pieces in portions in banana leaves and drizzle with the curry sauce. Serve as desired with cooked rice or rice noodles.
