500 grams Cassava (malanga or yucca, peeled and finely grated)
1 egg
3 garlic cloves (peeled and pressed through a garlic press)
1 Tbsp parsley
1 onion (finely chopped)
1 tsp salt
freshly ground peppers
1 tsp lemon juice
vegetable oil (to fry)

Preparation steps

1.

Mix all the ingredients together well into a thick, smooth batter.

Heat oil in a pan and place small portions of the batter in the shape of a cookie into the pan. Fry the cookies on both sides for about 2 minutes. Remove the cookies from the pan and keep warm in the oven (70°C) (approximately 160°F).
