- For the cupcakes
- 2 eggs
- ½ cup caster sugar (superfine)
- ¾ cup self-rising flour
- ½ cup butter (melted)
- 1 Apple (peeled and diced)
- To decorate

Preparation steps
1.
For the cupcakes: heat the oven to 180°C, 350F, gas 4. Grease a 12 hole bun tin

Whisk the eggs and sugar together in a mixing bowl until light and fluffy.
3.
Gently fold in the flour and butter, followed by the apple.
4.
Pour the mixture into the bun tins and bake for 15-20 minutes, until golden brown and a skewer inserted into one of the cakes comes out clean. Leave in the tins for 10 minutes and then place on a wire rack to cool.
5.
Sift over a little confectioners’ sugar just before serving and decorate with mint leaves.
