- For the muffins
- 2 cups all-purpose flour
- ½ cup caster sugar
- 2 tsps Baking powder
- 1 tsp ground cinnamon
- 1 egg (beaten)
- ⅔ cup milk
- 2 Apple (peeled, cored and finely chopped)
- ¼ cup sunflower oil
- For the buttercream
- ½ cup unsalted butter
- 2 ¼ cups powdered sugar
- ½ tsp vanilla extract
- To decorate
- Chocolate curl
- Chocolate flake
- 12 Apple
- lemon juice
- mint

For the chocolate flakes and curls: using a vegetable peeler, scrape thin curls from a chocolate bar.

1 Cutting board, 1 Large knife, 4 Bowls (3 größere, 1 kleine), 1 Teaspoon, 1 Small knife, 1 ggf. Blender, 1 Tablespoon, 1 Measuring cups, 1 Fine-mesh sieve, 1 Wooden spoon, 1 Plastic wrap
Preparation steps
1.
For the muffins: heat the oven to 190°C (170° fan) 375°F gas 5. Place paper cases in a 12 hole muffin tin.

Put the flour, sugar, baking powder and cinnamon into a mixing bowl.
3.
Add the egg, milk, apples and oil and stir for a few seconds until just combined.

Spoon into the paper cases and bake for 15-20 minutes until well risen and firm. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
5.
For the buttercream: beat the butter in a bowl until soft.
6.
Sift in the icing sugar and beat well. Beat in the vanilla.
7.
Spoon into a piping bag. Pipe swirls on each cake.
8.
Brush the apple slices with lemon juice to prevent browning. Decorate the cakes with chocolate, apple slices and mint leaves.
