1 Tbsp chopped parsley
½ lemon

Preparation steps

1.

Rinse kitchen-ready flounder and thoroughly pat dry. Season with salt and pepper and roll in flour. Heat in two pans one tablespoon each butter and oil and place the fish in with the white side facing down. Turn gently after 4 minutes and brown the second side.

2.

Remove from pan and keep warm. Add the remaining butter to the pan, leave to brown and stir in lemon juice. Arrange fish and sauce on plates and serve with chopped parsley and lemon wedges.
