- ¼ cup fine, dry breadcrumbs
- ¼ tsp ground ginger
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 4 fresh fish fillets (any type firm fish, about 450 g | 16 oz)
- 2 Tbsps butter (melted)
- ½ cup Mayonnaise
- 1 Tbsp Orange marmalade
- ¼ tsp ground ginger
- 4 Rolls
- 4 slices Tomatoes
- sliced Red onions (as desired)
- salad (lettuce)

Preparation steps
1.
Preheat oven to 450 degrees F/230 degrees C. Spray a medium size baking dish with cooking spray.
2.
In a small bowl, combine bread crumbs, ginger, salt and pepper. Set aside.
3.
Rinse fish and pat dry with paper towels. Place fillets on wax paper and brush all sides with melted butter. Coat all sides with the crumb mixture.
4.
Arrange the fish fillets in a single layer, in prepared baking dish. Bake for 6 minutes or until fish flakes easily when tested with a fork.
5.
In another small bowl, combine mayonnaise, marmalade, and ginger. Stir until well incorporated. Spread a layer on the bottoms of each roll.
