4 filets mignon (à 180 grams)
2 Tbsps vegetable oil
freshly ground peppers
50 grams black truffle pesto (substitute truffle cream)
400 grams fresh Mushrooms (such as Samthauben)
1 Tbsp butter
salt
2 centiliters Cognac
200 milliliters Whipped cream
2 Tbsps finely scallions
1 handful Boy Lettuce
black Truffle (as desired)

Preparation steps

Preheat the oven to 100°C (approximately 212°F).

Rinse steaks and pat dry. Heat the oil in a skillet and sear the steaks on each side for 1-2 minutes. Remove from pan and reserve. Season the steaks with pepper, brush with the truffle paste and place on a rack on a baking sheet. Bake on the middle rack of the oven 8-20 minutes, depending on the thickness of the steaks and the desired degree of doneness.

Clean the mushrooms with a damp towel. Heat the butter in the pan drippings and brown the mushrooms, season with salt and pepper. Deglaze the pan with the Cognac, add the cream and let simmer until lightly thickened. Season with salt and pepper.

Place the steaks on plates and sprinkle with chopped chives. Spoon the mushrooms sauce over. Serve to taste with young lettuce leaves and freshly grated truffle.
