Festive Tree Sponges
Pre-heat the oven to 180°C | 350F | gas 4.
Combine the flour, unsalted butter, sugar, honey, cornflour, eggs and vanilla extract in a large mixing bowl. Beat using an electric hand-held whisk until smooth; usually 2-3 minutes.
Grease and line a 10 inch square cake tin with greaseproof paper.
Spoon the cake batter into the tin and bake for 20-25 minutes until a cake tester comes out clean when inserted into the centre.
Remove and allow to cool on a wire rack for 5 minutes before turning out and allowing to cool completely.
Use a large Christmas tree shaped cookie cutter to cut 4 pieces of cake out from the whole cake. Dust with the icing sugar and serve.
