- 4 Fennel bulb
- 50 grams Walnut
- Walnut oil
- White balsamic vinegar
- salt
- peppers (freshly ground)

Preparation steps
1.
Trim fennel bulbs and cut into thick strips. Set aside some greens. Blanch fennel strips in boiling salted water for 3-4 minutes. Drain (reserving 1 cup of fennel water) and allow to cool. Chop the walnuts.
2.
Mix 4 tablespoons walnut oil with 3 tablespoons vinegar, walnuts and 3-4 tablespoons of fennel water. Season with salt and pepper. Drizzle the fennel with the vinaigrette. Chop fennel greens, sprinkle on the fennel and serve.
