Fava Bean Penne Pasta

This beautiful vegetarian dish provides fiber and protein thanks to the fava beans and protein from the cheese.
If you're vegan, simply omit the cheese or use a plant-based variety.

- 8 cups Penne
- 1 Tbsp olive oil
- 1 cup Mushrooms
- 2 cups fresh Fava bean
- 1 cup Vegetable broth
- ½ cup Caper
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- ½ cup grated Parmesan
Cook the pasta according to package instructions until 1 minute less than al dente.
Heat the oil in a skillet over medium heat and saute the mushrooms. Add the fava beans and cook for about 2 more minutes. Add the broth and capers, season with salt and pepper and simmer for about 5 minutes.
Drain the pasta, and add it to the fava bean mixture. Cook together for about a minute. Serve immediately, with freshly grated parmesan sprinkled on top.
