2 ½ cups Broad bean (fresh or frozen)
14 ozs Linguine
cup Bacon (diced)
4 Tbsps olive oil
1 bunch mint
cup Goat cheese

Preparation steps

1.
Blanche the beans in salt water for 6-8 min. Drain and rinse, peeling if required.
2.
Cook the pasta in boiling, salted water until al dente; 8-10 minutes.
3.
Fry the bacon in its own fat until crispy and brown. Pat dry with kitchen paper and chop.
4.
Fry the beans in hot oil, add the pasta (and a little of the cooking water if necessary) and stir in the mint. Crumble the cheese on top and season with salt and ground black pepper. Arrange on plates and add the bacon.
