2 Tbsps brown sugar
1 Apple (peeled, cored, and cut into matchsticks)
1 Pear (peeled, cored, and cut into matchsticks)
2 slices Pineapple (peeled, cored, and cut into matchsticks)
1 tsp fresh ginger (roughly chopped)
3 Tbsps raisins (roughly chopped)
2 mint (chopped)
2 Tbsps shelled Walnut (chopped)
2 Tbsps blanched almonds (chopped)
2 Tbsps Pistachio (chopped)
1 tsp grated Orange zest
2 tsps grated lemon zest
6 cloves
2 pinches Baking powder
6 Tomatoes
fresh Orange juice
1 Vanilla bean

Preparation steps

Put a tablespoon of brown sugar in a high sided skillet or saucepan. Place over a high heat. When the sugar starts to caramelize, add the sticks of fruit and toss for 3-4 minutes.

Then add all the chopped ingredients, orange and lemon zest, cloves and cinnamon. Mix together well and cook over a lower heat for 5 minutes, stirring all the while.

Remove stalks from tomatoes. Plunge into boiling water for a few seconds. Drain and rinse under the cold tap. Peel and cut the tops off, hollow out without damaging them.

Preheat the oven to 200°C | 400F | gas 6.

Put the tomatoes on an oven tray. Fill with fruit and spices stuffing. Replace tops and sprinkle with the remaining brown sugar.

Pour the orange juice over the base of tray and add the vanilla pod, split lengthways. Bake in the oven for about 10-12 minutes.
7.
Serve straight from the oven.
