- For the cupcakes
- 2 eggs
- 1 cup self-rising flour
- ½ tsp Baking powder
- ½ cup butter (softened)
- ½ cup sugar
- 1 tsp vanilla extract
- For the icing
- 2 cups powdered sugar
- 2 Tbsps water
- 1 tsp vanilla extract
- For the decoration
- 12 pink Ribbon

Preparation steps
1.
For the cupcakes: heat the oven to 160°C (140° fan) 325°F gas 3. Place paper cases in a 12 hole bun tin.
2.
For the cupcakes: put all the ingredients into a mixing bowl and whisk with an electric whisk until well combined. Alternatively beat well with a wooden spoon.
3.
Spoon the mixture into the paper cases and bake for 20-25 minutes until golden and springy to the touch. Remove from the tin and place on a wire rack to cool completely.
4.
For the icing: sift the icing sugar into a bowl and gradually stir in the water and vanilla until smooth and thick enough to coat the back of a spoon.
5.
Spoon the icing onto the cakes and spread evenly. Leave to set.
6.
To decorate: tie a ribbon around each cake.
