Exotic Fruit Baked Pudding
Preheat the oven to 180°C | 350F | gas 4.
Grease a baking tin with butter or vegetable oil, then place the lychees in the bottom.
In a bowl, whisk together the flour, salt and sugar and the beaten eggs until smooth, then whisk in the milk and mix to a smooth batter.
Pour the mixture over the lychees and bake for 35-40 minutes. Allow to cool before serving.
