- 2 ½ cups tart Apple (cored and chopped)
- 4 cups Rhubarb (thinly sliced)
- butter (for the ramekins)
- 1 organic lemon
- 2 Tbsps honey
- 1 cup ground almonds
- ⅔ cup brown sugar
- ⅔ cup flour
- ⅔ cup rolled oats
- ½ cup slivered almonds
- ½ cup butter
- ½ tsp cinnamon

Preparation steps
1.
Preheat the oven to 180°C | 350F | gas 4.
2.
Mix together the apples and rhubarb. Place in four greased ramekins.
3.
Remove the zest from the lemon. Squeeze out the juice. Mix together the zest, lemon juice and honey. Drizzle over the apples and rhubarb and mix well.
4.
Combine the ground almonds, flour, oats, sugar, slivered almonds, cinnamon and butter. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles coarse crumbs.
5.
Spread the topping over the apple and rhubarb. Bake in the preheated oven for approximately 30 minutes until golden brown. Remove from the oven and serve at room temperature.
