1 cup Golden raisins
1 cup Currants
cup Dried Plum (finely chopped)
cup Rum
1 Apple (peeled and grated)
0.333 cup candied Lemon peel
0.333 cup candied Orange peel
¼ cup soft butter
1 ½ cups fresh breadcrumbs
½ cup flour
¾ cup ground Hazelnuts
0.333 cup brown sugar
3 eggs
¼ tsp ground cloves
½ tsp cinnamon
Cherries (to garnish)

Preparation steps

1.
Heat the oven to 150°C (130°C in a fan oven), 300°F, gas 2 and grease a pudding mould.
2.
Cover the sultanas and currants with boiling water and then drain. Mix together with the dried plums and the rum.
3.
Mix the grated apple with the candied orange and lemon peel and add to the rum-fruit mixture.
4.
Add the butter, bread crumbs, flour, nuts, sugar, eggs, cloves and cinnamon and knead into a dough.
5.
Pour the dough into the prepared pudding mould and cover with aluminium foil. Place the mould in a bain-marie on an oven rack and cook in the oven for 3 hours. Keep in the closed mould until serving. To serve, knock out of the mould and serve garnished with cherries.
