Mix together the flour, sugar, yeast, milk and a pinch of salt to form a thick pouring batter. Cover and leave to rise in a warm place for around 2 hours.
Put a little butter in a hot pan. Butter some crumpet rings (rings with a diameter of 8 cm) and place these in the pan. Spoon the batter into the rings to a depth of approx. 1 cm. Fry the crumpets for around 2 minutes until bubbles form on the surface. Remove the rings and turn the crumpets. Fry on the other side for a further approx. 2 minutes until golden brown, then remove from the pan. Continue in this way until all the batter is used up - around 8 crumpets.
Serve with marmalade if desired.
