- ½ cup Almond flour
- ⅓ cup all-purpose flour
- 1 tsp Matcha
- Baking powder
- ¾ cup powdered sugar
- 4 egg whites
- To garnish
- ¾ cup powdered sugar
- 3 Tbsps Lime juice
- 2 Tbsps freeze-dried Raspberries (finely chopped)

If you don't have a madeleine mould, you can use mini muffin cases or praline cases.
Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6. Melt the butter and use some of it to grease a madeleine mould(s).

Mix together the almonds, flour, a pinch of salt, matcha powder, a pinch of baking powder and the icing sugar. Fold in the egg whites and the remaining butter and transfer to the mould(s) using one teaspoon of cake mixture for each madeleine. Bake in the middle of the oven for around 10 minutes. Leave to cool in the mould(s), then knock out and leave to cool on a wire rack.

Mix together the icing sugar and the lime juice to create a thick pasta and brush onto the madeleines. Sprinkle with the raspberries and leave to dry.
