Preparation steps

Cut the eggplants in half, scoop out from middle, and chop about 100 grams (approximately ½ cup) of scooped-out eggplant pulp into small cubes.
Cut the onion and paprika into small cubes. Heat 1 tablespoon olive oil in a pan and saute the onion and paprika in it until soft.
Chop the rinsed chile pepper and garlic finely. Cut the feta into cubes. Mix ground beef with sauteed onion and paprika, chopped eggplant, chile pepper and garlic. Season with salt, pepper and cayenne pepper, and mix well.

Stuff the mixture equally into each hollowed eggplant. Place the stuffed eggplants in a greased baking dish, drizzle with remaining olive oil and bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 35 minutes.
