4 slices Puff pastry dough (frozen, square)
1 Eggplant
1 Red onion
salt
freshly ground peppers
olive oil
4 slices Prosciutto
Arugula
thyme

Preparation steps

1.

Thaw puff pastry and cut out in plate sizes. Arrange on a baking sheet sprinkled with cold water and bake in preheated oven at 200°C (approximately 400°F) for about 15 minutes or until golden brown. 

2.

Rinse and trim eggplant, cut crosswise into thin slices and season with salt and pepper, Brush with a little oil and grill on a hot grill on both sides.

3.

Peel onion and cut into rings. Heat olive oil in a pan and saute onion until soft.  

4.

Arrange pastry on plates, spread with eggplant slices and onion, top each with a slice of ham and garnish with arugula and thyme. Serve.
