This quick breakfast treat is packed with protein from the eggs and only has 250 calories per griddle.
For more flavor and protein, add some cheddar cheese on top of the egg before serving.

Ingredients

- For the dough
- 3 ⅓ cups all-purpose flour
- 1 ½ ozs Yeast
- ¼ oz Dried yeast
- ¾ cup lukewarm milk
- ⅓ cup sugar
- ½ cup butter
- 3 egg yolks
- ⅔ cup raisins

Preparation steps
1.
Sieve the flour into a bowl and create a well in the middle. Mix together the yeast, milk and sugar and pour into the well. Dust with a little flour then cover and leave to rise in a warm place for around 15 min.

Add the butter and the egg yolks and knead into a smooth dough. If necessary add more flour. The dough should not stick to your fingers. Cover and leave to rise for around 45 min.

Heat the oven to 350°F and line a baking tray (or two) with grease-proof paper.

Soften the raisins in warm water for around 5 min then drain and knead into the dough. Split the dough into 15-20 portions and shape each one into little oval-shaped cakes. Place on the prepared baking tray(s) and bake for around 20 min until golden brown. Remove from the oven and leave to cool.
5.
Whip together the cream and sugar and spread onto each bread. Top with half an apricot and serve.
