- 2 Tbsps olive oil
- 2 cloves garlic cloves (finely chopped)
- 1 small onion (sliced)
- 4 cups Mushrooms (quartered)
- 2 cups Spinach (chopped)
- 5 sun-dried tomatoes (drained & chopped)
- 8 eggs
- ½ tsp Sea salt
- freshly ground peppers
- To serve
- baby Spinach

Preparation steps
1.
Heat the grill.
2.
Heat the oil in a large frying pan. Add the garlic, onions and mushrooms and cook for a few minutes until the onions are translucent.
3.
Add the spinach and cook gently for 2 minutes. Add the tomatoes and stir.
4.
Beat together the eggs, salt and pepper.
5.
Pour over the vegetable mixture, stirring to combine.
6.
Cook for about 4 minutes, until the eggs are almost but not quite set and still moist on top.
7.
Place under the grill until lightly browned.
8.
Cut into wedges and serve with baby spinach.
