1 frozen, pre-made Pie crust (thawed)
6 slices crispy, cooked Bacon (roughly crumbled)
2 tsps olive oil
½ large vidalia onion (sliced thinly)
3 scallions (cleaned; trimmed and chopped; plus extra for garnish)
White pepper (to taste)
1 cup shredded Fontina cheese
½ cup Baby spinach (finely chopped)
¼ cup cream
¾ cup low-fat milk
4 extra-large eggs
½ tsp cinnamon
½ tsp salt
¼ tsp ground peppers

Preparation steps

1.
Preheat oven to 375ºF / 190ºF.

Heat oil, in a skillet set over medium heat, sauté onions and scallions translucent, softened and slightly brown. Remove from heat and drain on paper towels.

Sprinkle about 1/2 teaspoon of white pepper and half of the shredded cheese into the pie crust. Arrange a layer of finely chopped baby spinach over the cheese.

Arrange onions on top of spinach and sprinkle with crumbled bacon.

In a small bowl, whisk cream, milk, eggs, and seasonings together. Pour over ingredients in pie crust. Sprinkle remaining cheese over egg mixture.
6.
Bake for 35 to 40 minutes, or until quiche is firm and lightly brown. Allow to cool on a wire rack for 5 to 10 minutes before cutting into slices. Garnish with finely chopped scallions. Serve.
