1 cup unsalted butter
½ cup caster sugar
1 cup all-purpose flour
¾ cup Almond flour
½ cup Strawberry Jam (or raspberry jam)
To decorate
powdered sugar

Preparation steps

Beat together the butter and sugar in a mixing bowl, then add the flour and ground almonds. Mix to a soft dough. Wrap in cling film and chill for 1 hour.

Heat the oven to 140°C (120° fan) 300°F gas 1. Line 2 large baking trays with non stick baking paper.
3.
Knead the dough lightly on a lightly floured surface and divide in half. Roll out one half of dough into a square and cut out squares with a crimped edge cutter or a sharp knife. Lightly knead the dough trimmings together and roll out again. Cut out more squares until you have about 20-24 squares. Place them on a baking tray, slightly apart.

Roll out the remaining dough and cut out the same sized squares. Using a small heart-shaped cutter cut out the centre of each square. Place them on a baking tray.

Bake for 20-30 minutess until just golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely. Sift a little icing sugar over the the cut-out heart biscuits.
6.
Gently warm the jam. Spread a little jam on the biscuits without the cut-out hearts. Place the top halves of the biscuits on the jam and push down gently.
