Ingredients

For the cake
1 ½ cups self-rising flour
1 tsp Baking powder
¾ cup unsalted butter (softened)
3 eggs (beaten)
¾ cup caster sugar
1 tsp vanilla extract
For the filling
½ cup Strawberry Jam (or raspberry jam)
To decorate
¼ cup powdered sugar

Preparation steps

For the cake: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 23cm|9" heart-shaped cake tin.
2.
Sift the flour and baking powder into a mixing bowl. Add the remaining cake ingredients and beat well until thoroughly mixed.
3.
Spoon the mixture into the tin and level the top. Bake for 30-35 minutes until golden. Insert a skewer or cocktail stick into the centre of the cake - it will come out clean when the cake is cooked. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
4.
Cut the cake in half horizontally and spread one half with the jam. Sift the icing sugar over the top.
