1 kilogram starchy potatoes
200 grams cornstarch
2 eggs
3 Tbsps softened butter

150 grams Bacon (finely diced)
4 Tbsps scallions

50 grams cooked Sauerkraut (such as canned)

Preparation steps

1.

Peel the potatoes, rinse, cut into small pieces, and boil for 25 minutes. Drain, let evaporate slightly and press through the ricer.

Mix the potatoes with the cornstarch, eggs, 2 tablespoons butter, chives, and nutmeg. Season with salt and knead the mixture well to a smooth dough.

Peel the onion, chop finely and fry in the remaining butter. Add the bacon and sear. Mix in the sauerkraut. Season well with salt and pepper.

Bring 2 liters of salted water to a boil. Divide the dough into 8 dumplings, stuff about 1½ tsp bacon mixture in the center, seal the stuffing and shape into dumplings. Cook the dumplings in boiling water for 20 minutes. Remove the dumplings from water and serve.
